The One Green Juice You Need For Summer
If you ran into the half-Danish and half-German Jil Larsen, founder of New York City’s Magic Mix Juicery, on the street today, you’d see the picture of wellness. Clear skin, white teeth and a lit-from-within glow that only comes from being truly happy and healthy. But as she’d be the first to tell you, her story isn’t so simple.
Larsen moved to New York City from London ten years ago. Once in the city, she did what any smart, sensible, ambitious young girl would do: She threw herself into the hustle 100 percent. She scored a paralegal job at a law firm working 18-hour days.

“I was doing the full-on crazy NYC lifestyle,”
she says. “Pop-Tarts in the morning and alcohol at night.”
A few years into it, she felt foggy-headed and tired all the time. She also developed severe melasma, a pigmentation condition where patches of melanin gather in dark brown patches on the skin. “I wanted to go out, have fun and feel good about myself,”
she said. But she felt embarrassed and insecure. “I had to cover my face with tons of makeup even to leave the house,”
she said. It was a total bummer and too time consuming.
Since there’s no known cure for melasma, Larsen took matters into her own hands. That meant quitting her job, becoming a certified health coach at the Institute for Integrative Nutrition and buying a Norwalk juicer. “I had this feeling that I needed to reboot my system and start focusing on my health from the inside out,”
she says.
She researched Gerson Therapy (a dietary-based cancer treatment) and the Hippocrates plant-based health method and decided to see if nourishing her body with maximum nutrients could help. For three weeks, she did nothing but juice. “It was just me, my dog and tons and tons of produce,”
Larsen laughs. But here’s the thing: It worked. “It was crazy. I was energized. I was clear-headed. My friends noticed the change in me,”
she says. After the three-week cleanse, green juice and a plant-based diet became part of her daily life. Oh, and, no biggie, but her melasma completely cleared up.

Larsen’s the first to admit that juicing every day for every meal is labor intensive. And that’s exactly why she started her own shop. “I wanted to create a space for everybody to get the benefits I had experienced.”
. In 2011, she started bottling juice from her kitchen. Today, she has a bustling Financial District outpost where every juice is pressed on site.

Serves one adult or two children
14 oz water
2 handfuls of spinach
1 1/2 cups pineapple
1/2 red apple
1/2 green apple
1/2 teaspoon of spirulina
Combine in a blender and process until smooth.
